Bread flour is not a superior all-purpose flour; it is a flour milled from hard wheat with enough protein to build a dough that resists tearing and holds gas. That difference shows up in pizza dough as chew, browning and a skin that can be stretched thin without ripping.

Bread covers a lot of ground, and most of it is irrelevant here. What matters is that bread flour exists as a distinct product category because commercial bakers needed a flour that could carry a long fermentation and a high hydration without collapsing. Home bakers inherited that product, and pizza dough is one of the clearest places to see what it does differently from a softer flour.

A loaf and a pizza crust are pulling in opposite directions on one point. Bread wants a crumb that sets and holds its structure through a long bake.
